General Information
The food additive E960d is glycosylated steviol glycosides — a subtype of the food additive E960, used in the food industry as a sweetener.
The main difference between the food additive E960d and other subtypes lies in its method of production. It is obtained through targeted enzymatic glycosylation of steviol glycosides.
At the first stage of E960d production, steviol glycosides are extracted from the leaves of Stevia rebaudiana or obtained by biotechnological methods. Then, additional glucose fragments are attached to the molecules of steviol glycosides (mainly stevioside and rebaudioside A) using specific enzymes (usually glycosyltransferases). As a result, glycosylated derivatives are formed, characterized by increased water solubility and a smoother, cleaner sweet taste.
The food additive E960d is used as a high-intensity, non-caloric sweetener in soft drinks, flavored waters, dairy products and desserts, sugar-free confectionery, functional foods, sports and dietary nutrition, as well as in pharmaceutical syrups and vitamin complexes.
