Food additive E460(i) (microcrystalline cellulose) is one of the forms of cellulose (additive E460), produced from wood, cotton, or other cellulose-containing plants. After lignin removal, the raw material is treated with caustic soda and then undergoes crystallization processing.
The distinctive feature of additive E460(i) is the precisely controlled size of its crystalline particles, which gives the substance high stability and unique properties. Additive E460(i) is insoluble in water but forms stable colloidal suspensions.
Stabilizer E460(i) is widely used in the production of yoghurts, desserts, and creams to stabilize texture and ensure product quality.
