General Information

Ammonium polyphosphate (food additive E452(v)) is a subtype of E452 additives. It is an ammonium salt of polymeric orthophosphoric acid with the chemical formula (NH4PO3)n, where "n" represents the number of phosphate units in the chain.

The production of ammonium polyphosphate involves the thermal condensation of orthophosphoric acid with ammonia at high temperatures. Depending on the degree of polymerization, the resulting substances vary in molecular weight and physical-chemical properties, ranging from highly soluble to sparingly soluble forms.

E452(v) exhibits strong moisture-retaining and complex-forming properties. Due to the presence of ammonium groups, the additive dissolves well in water and effectively binds calcium and magnesium ions, preventing the formation of precipitates in food products. Its ability to stabilize protein structures makes it valuable in the production of meat and fish products.

In the food industry, E452(v) is used as a stabilizer, emulsifier, and texturizer in the manufacture of sausages, ready-to-eat products, seafood, processed cheeses, and confectionery items. It enhances the water-binding capacity of products, improves their texture, and prevents moisture loss during storage and thermal processing.

An important property of E452(v) is its ability to slow down the oxidation of fats and oils, which helps extend the shelf life of food products.
