General Information

Food additive E322(i) is natural lecithin, a subtype of the additive E322. Lecithin is a phospholipid substance of natural origin. It is mainly extracted from soybeans, as well as from sunflower seeds or rapeseed.

Natural lecithin is a mixture of phosphatides, primarily phosphatidylcholine. It may appear as a viscous, oily, amber-colored substance or in powdered form. It has no distinct taste or odor.

Due to its surface-active properties, additive E322(i) is widely used as an emulsifier, antioxidant, and stabilizer. It is used in the production of chocolate, margarine, mayonnaise, baked goods, powdered milk, and dietary supplements.

This subtype is less modified compared to E322(ii) (hydrolyzed lecithin), which makes it a more "natural" form and therefore more commonly used in organic products and baby food.
