General Information
Carrageenan (additive E407) consists of polysaccharides derived from red seaweed through alkaline extraction. In the food industry, it is used as an emulsifier and thickening agent.
The name of the substance originates from one of the types of red algae. These algae are found in almost all seas and oceans, but the main regions for carrageenan harvesting include Indonesia, the Philippines, and the coasts of Canada, the USA, France, and Chile. In these countries, the production of additive E407 is established at an industrial level. The quality of the final product largely depends on how carefully the raw materials are collected. The color of carrageenan varies depending on the body of water and the type of algae it is derived from.
Carrageenan was first discovered in the 9th century. The first industrial facilities for its production appeared in the 1930s. Today, over 3,000 types of carrageenans are known.

Additive E407 is classified as a substance of natural origin. Carrageenans have antiviral, anti-ulcer, and anticoagulant properties. There is also an opinion that carrageenan may help prevent the development of cancerous tumors.
Due to its long history of use and extensive research, additive E407 has been approved for use in baby food, medical and preventive nutrition, and dietary products.
Harm
Some studies indicate that carrageenan may cause inflammatory reactions in the intestines when consumed in large doses. However, there is currently no conclusive evidence of harm from additive E407 when consumed in moderation.
Uses
The primary function of carrageenan is to form gels. Thanks to this property, additive E407 is used in the food industry as a thickener, emulsifier, and stabilizer.
Carrageenan is most commonly used in the production of dairy products, milkshakes, ice cream, and confectionery. It is also added to sausage products to increase the volume of the final product and reduce its production cost.
