General Information
Food additive E450(vi) is calcium pyrophosphate (dicalcium diphosphate), an inorganic salt of pyrophosphoric acid that belongs to the group of additives E450. It is a white crystalline powder, odorless and tasteless, with poor solubility in water. The chemical formula is Ca₂P₂O₇.
Calcium diphosphate is produced by neutralizing phosphoric acid with calcium hydroxide or by reacting calcium salts with pyrophosphates. It is stable under normal storage conditions and has low solubility, which makes it suitable for use in products requiring slow additive release.
In the food industry, E450(vi) is used as a leavening agent, stabilizer, acidity regulator, and as a source of calcium. It is added to baked goods, dry mixes, as well as dietary and infant food products.
Due to its high calcium content and slow dissolution rate, this additive can improve the mineral composition of products and provide controlled acidity regulation.
