General Information

Food additive E450(v) is tetrapotassium diphosphate, one of the salts of pyrophosphoric acid in the group of additives E450. It is a white crystalline odorless powder that dissolves well in water. The chemical formula is K₄P₂O₇.

Additive E450(v) is produced by thermal dehydration of potassium phosphates under controlled conditions. It is a fully neutralized salt of pyrophosphoric acid containing four potassium atoms.

In the food industry, additive E450(v) is used as an emulsifier, stabilizer, acidity regulator, and leavening agent. It is added to baking mixes, meat products, processed cheeses, and instant products.

Due to its high buffering capacity and alkaline nature, tetrapotassium diphosphate is particularly useful in formulations that require pH regulation.
