General Information

Food additive E450(iv) is dipotassium diphosphate, one of the representatives of the E450 group of additives. It is a white or colorless odorless powder that dissolves well in water. The chemical formula is K₂H₂P₂O₇.

Dipotassium diphosphate is produced by dehydrating potassium hydrogen phosphates at temperatures above 250°C, resulting in salts of pyrophosphoric acid.

In the food industry, additive E450(iv) is used as an emulsifier, stabilizer, and leavening agent. It improves the texture of products, helps retain moisture, and maintains the homogeneity of mixtures. It is especially useful in the production of meat products, dry mixes, and bakery goods.

Compared to other pyrophosphates, dipotassium diphosphate has lower alkalinity, which is why it is often used in formulations sensitive to pH levels.
