General Information

Food additive E450(iii) is tetrasodium diphosphate (sodium pyrophosphate), one of the salts of pyrophosphoric acid, which belongs to the group of additive E450. It is a colorless or white crystalline powder, highly soluble in water, and has no distinct odor or taste. The chemical formula is Na₄P₂O₇.

Sodium pyrophosphate is produced by dehydrating sodium salts of orthophosphoric acid, resulting in the formation of diphosphoric acid salts.

Additive E450(iii) is widely used in the food industry as an emulsifier, stabilizer, and leavening agent in baking. It helps retain moisture in products, improves texture, and increases the volume of finished goods. It is especially common in meat and fish products, bakery items, and dry mixes.

Compared to other pyrophosphates, sodium pyrophosphate effectively binds calcium ions, which is beneficial for stabilizing the structure of food products.
