Dipotassium hydrogen phosphate (additive E340(ii)) is a mildly alkaline salt that belongs to the group of potassium phosphates, generally labeled as E340.

The chemical formula of additive E340(ii) is K2HPO4. Dipotassium orthophosphate appears as a white, odorless crystalline powder that is highly soluble in water.

In the food industry, additive E340(ii) is used as an acidity regulator, emulsifier, and stabilizer. It is applied in food products where a slightly alkaline environment is needed to stabilize structure and prevent protein coagulation, such as in processed cheeses as a melting salt (prevents protein curdling during melting).
