In the food industry, additive E340(i) is used as an acidity regulator, emulsifier, stabilizer, and moisture-retaining agent. Due to its ability to maintain an acidic or neutral pH, monopotassium phosphate is applied to stabilize the color of vegetables during heat treatment, preventing discoloration.
