General Information

Sodium acetate (food additive E262(i)) is a subtype of the additive E262, which belongs to acidity regulators and preservatives. The chemical formula of the substance is C₂H₃NaO₂ or CH₃COONa.

The additive E262(i) is obtained by neutralizing acetic acid with sodium hydroxide or sodium carbonate, after which the product is purified and dried. In industry, additive E262(i) is used as a white crystalline powder or granules, well soluble in water and with a characteristic mild vinegar odor.

The main feature of sodium acetate is its ability to stabilize the acid-base balance and inhibit the growth of microorganisms.

In the food industry, it is used as a preservative and buffer in the production of bakery products, snacks, ready-made sauces, and meat products.

Thanks to its mild antimicrobial action, additive E262(i) prevents mold development and extends the shelf life of foods.

Unlike sodium diacetate (E262(ii)), sodium acetate does not have a pronounced acidic taste and is more often used where a neutral or slightly alkaline product profile is required.
