General Information

Sodium saccharin (additive E954(ii)) is the sodium salt of saccharin and belongs to the group of saccharins (additive E954). In the food industry, it is used as an intense non-caloric sweetener.

The chemical formula of sodium saccharin is C7H4NNaO3S. It is obtained from saccharin by neutralization with sodium hydroxide or other alkaline reagents. The final product (additive E954(ii)) is a white or slightly cream-colored crystalline powder, highly soluble in water. 

Due to its good solubility and more neutral taste profile, sodium saccharin is much more convenient to use than pure saccharin. Its sweetness exceeds that of sucrose by 300–500 times.

In the food industry, additive E954(ii) is used in beverages, syrups, sauces, desserts, and diet products.

Compared with other saccharin salts, the sodium form is the most widely used because of its simple production, low cost, and ease of handling. It has good stability and can be stored for long periods without loss of properties.

A drawback of sodium saccharin compared with other sweeteners may be a slight metallic aftertaste at high dosages, although it is less pronounced than in pure saccharin.
