General information
Calcium cyclamate is a subtype of additive E952 and represents the calcium salt of cyclamic acid.
According to Regulation (EU) No 231/2012, in the European Union calcium cyclamate is labeled as E952(iii). In the International Numbering System for Food Additives (Codex Alimentarius: CXG 36-1989), it is listed under the code INS 952(ii).
The chemical formula of calcium cyclamate is C₁₂H₂₄CaN₂O₆S₂. Additive E952(iii) is obtained by neutralizing cyclamic acid with calcium salts. Externally, the calcium salt of cyclamic acid is similar to other forms of cyclamate: it is a white, odorless powder that dissolves well in water.
Calcium cyclamate, like sodium cyclamate, is highly thermostable and resistant to acids, which makes it suitable for use in beverages, desserts, chewing gum, and baked goods.
Calcium cyclamate is used less frequently in the food industry compared to sodium cyclamate, but it has certain advantages. Its specific feature is that it provides an additional source of calcium ions, which is sometimes considered a beneficial property for certain categories of products. Additive E952(iii) is more commonly used in regions or formulations where sodium content in food needs to be limited.
